VICKI'S WINTER INSPIRATION...
This week I have put together a few things that I love about winter. Fashion, home, a family favourite crockpot recipe and a couple of beauty specials.
Winter Fashion 2019
This winter fur is in as is leopard print…big time in shoes, bags and coats. When things like the leopard print come in for a season I buy just one statement piece that I can mix and match with more neutral clothing items.This winter I invested in the “I Spot You Coat” by Cooper from Trelise Cooper. It's fun and super warm. Great for those early start cold Winter mornings we have when jack frost has been out.
The colour navy is also quite strong this winter and is well known for being a popular colour in Canterbury. I love navy with rose gold accessories. This winter Paula Ryan has some lovely timeless navy dresses that can be accessorised for just about any occasion. Dyberg Kern have some beautiful rose gold jewelry. The new floral Ted Baker wallets also pair well with navy as a fashion accessory. If wearing a navy outfit I personally feel it should be teamed with navy footwear. Boots in Navy are a good option and also look great with jeans.
At Vicki’s by the fire.After a busy day or week, nothing beats coming home to a lovely warm and cosy home with the fire on. There is something tranquil and inviting about the flames of a fire. I personally am a bit of a homebody in winter, I really like that in Christchurch we get lovely long Summer days and in Winter we have the cooler temperatures, cook nice hearty meals and snuggle up with a vino and a book by the fire.We use the crockpot a lot in our house during winter a lot. I can prepare dinner the night before store the crock pot bowl full of food in the fridge ready to put in the crockpot the next morning. We do corned beef, satay chicken, sausage casserole, roast chicken, beef stew and easy nachos to name a few. Below is my Easy Crock Pot Veggie and Beef Nacho recipe, an easy tea and always a favourite with the whole family.
- 900gm Premium mince
- 1 x 400gm can Pam’s Basil and Oregano diced tomatoes
- 1 x 400gm can Pam’s Mild chili beans
- 8 leaves finely chopped silverbeet
- 1 red pepper chopped
- 1 yellow pepper chopped
- 1 red onion chopped
- ½ cup sweet chili sauce
- 1 pkt Farrah’s Nacho spice mix 40gm (I use this brand as its GF)
- 1 x Wattie’s wok creations Vietnamese stir fry vegetables frozen
- 1 x large pkt corn chips
- 1 x pkt light sour cream
- 1 cup edam grated cheese
- 1 avocado
Brown off the mince in a frying pan.Chop up peppers, silverbeet, onion.Combine in the crockpot.Add in tinned tomatoes and chili beans and nacho mix with 1 cup water.Add in chili sauce.
Put in the crockpot on low setting for the day, sometimes I prepare the night before and leave in the fridge in the crock pot for the night.
6 hours later put in defrosted Wattie’s Wok Creations Vietnamese stir fry vegetables into the crock pot cook for a further 30 minutes. Layer nacho chips in a shallow bowl top with crockpot nacho mix grated cheese, sour crème, and avocado. Such an easy and delicious meal for the family.
